Maria’s Lemon Blueberry Bread
1 cup butter (no substitutes)
2 cups sugar
3 cups flour
½ teaspoon soda
½ teaspoon salt
2/3 cup buttermilk
2 Tablespoons lemon juice
8 ounces blueberries (blackberries are delicious as well) dusted with a teaspoon or so of flour
- Cream together butter and sugar until light and fluffy. Add the eggs and incorporate into the butter mixture. Adding them one at a time works best. Stop the beaters of the mixer and scrape down the sides of the bowl. Mix dry ingredients together and add alternately with the buttermilk. Add in the lemon juice. Stop the mixer and fold in the dusted berries by hand.
- Spoon mixture into prepared loaf pans. Bake at 350 for about 50 minutes. Insert a toothpick to test for doneness.
- Sprinkle with confectioner’s sugar when completely cool.
